You Will Need:
2 tablespoons of softened, lightly salted butter * 1 egg * 1 eight inch round greased and floured cake pan * 1/2 cup of buttermilk, or 4 ozs. of plain yogurt , or 1/2 cup of whole milk
Pre-heat the oven to 350°.
1. Combine Katie Reilly’s flour mixture with the contents of the raisin packet in a large mixing bowl.
2. Blend in the softened butter.
3. In a separate bowl, combine the egg with either buttermilk, yogurt or whole milk.
4. Combine the egg mixture with the flour mixture and stir until moist.
5. Remove the dough from the bowl and knead on a lightly floured surface for approximately 2 minutes.
6. Shape dough into a round loaf, place in the greased, floured cake pan and bake for 40 - 45 minutes, or
....until a knife inserted in the center of the loaf comes out clean. Note: For authentic Irish Soda Bread,
....when shaping the loaf don’t make it smooth. Creating small peaks and ridges in the dough with your
....fingers will vary the thickness of the crust, giving the bread a more interesting taste and appearance.
7. Cool the loaf in the pan on a cooling rack for 15 minutes, then remove it from the pan. Serve warm or
